Apple Pie Bars

 

Remember, remember the 5th of November... So, it's only Oct. 31 today, but I'm imagining that it's really the 5th of November. 
*Sigh*  What a stressful last few weeks.  I've started a new graduate class, and it's killing me.  I'm taking an educational research class.  I'm not a researcher at all, and I feel so inadequate.  But hey, I finished the first week already, and I only have 7 more weeks left of this misery. 
So I've had a lot of stresses at school lately.  Lots of miscommunication and confrontation from my part.  I love teaching my students, but I'm starting to dread going to work simply for the fact of having to deal with other teachers. 
About a week ago, I decided to stay home from church.  It was the worst week I've ever had teaching, and ironically, none of the issues were from the students.  Zach had things he needed to do at church, so it was just going to be me at home.  I started planning and looking forward to this Sabbath at home for days ahead of time.  I really just needed some time with God, but to set the mood, I thought it'd be fun to make a delightful treat.  I had gotten up a little early to make applesauce for Zach before he left, and while I was chopping up the apples, I had a brilliant idea- apple pie bars.  These bars always remind me of my mom.   I wanted to create the memory I have of eating these at home on a crisp September evening, the sun getting ready to set....ahh...it's a beautiful memory.  Here's the recipe that makes me feel like fall has arrived.  For Taiwan, fall is here some days and other days it's still 90 degrees. 



Roll out the dough into your pan.

 Sprinkle crushed up cornflakes on top of the dough. 

Spread the sliced apples on top of the crust.  

Sprinkle cinnamon and sugar on top of the apples.  

Roll out the saved dough and place on top. 




Recipe adapted from Land O Lakes

Pastry

1 egg separated, reserve egg white (I didn't bother to use the egg white, and I think it turned out fine).
1/2 cup milk (I used soy milk.)
2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup cold butter, cut into chunks

Filling

1 cup crushed corn flakes
8 to 10 medium (8 cups) tart cooking apples, peeled, sliced
1 cup sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 reserved egg white
2 tablespoons sugar
 

Glaze  

(I didn't feel like using up my powdered sugar from the States for this, and so I didn't put the glaze on at all.)


1 cup powdered sugar
1/2 teaspoon vanilla
1 to 2 tablespoons milk


Directions

Heat oven to 350°F. Beat egg yolk in small bowl. Add 1/2 cup milk; mix well. Set aside.

Combine flour and salt in medium bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in egg yolk mixture with fork until dough forms a ball. Divide dough in half.

Roll out half of dough on lightly floured surface into 15x10-inch rectangle; place onto bottom of ungreased 15x10x1 inch jelly-roll pan. Sprinkle with corn flakes; top with apples.

Combine 1 cup sugar, 1 1/2 teaspoons cinnamon and nutmeg in small bowl. Sprinkle over apples. Roll remaining half of dough into 15 1/2x10 1/2-inch rectangle; place over apples.

Beat egg white with fork until foamy; brush over top crust. Combine remaining cinnamon and 2 tablespoons sugar in small bowl; sprinkle over crust. Bake for 45 to 60 minutes or until lightly browned.

Combine powdered sugar, vanilla and enough milk for desired glazing consistency in small bowl. Drizzle over warm bars.

Sarah's Taiwanese Calzones



      Yesterday (Sunday), was the first day this year that I did only 2 hours of schoolwork!  Amazing!  I seem to live in my classroom on Sundays.  In order to celebrate taking a break from lesson planning and graduate classwork, I decided to cook.  Zach had a basketball game to coach, and I thought about going.  However, it started to slightly rain, and I love to cook when it's raining.  It only rained for 10 minutes, but I imagined that it kept raining.
       I've made calzones before, but they were never anything special.  These weren't bad but not absolutely amazing.  In the words of Zach, "They're good."  Nothing special, just good.  That's ok.  I've come to the conclusion that I'm not great at making amazing calzones.
       I did have some leftovers for lunch today, and despite the fact that I accidentally put it in the freezer and not the fridge, it tasted just as good as it did fresh. 

The lovely ingredients.  In my calzones I put tomatoes, mushrooms, olives, 地瓜叶 - the Taiwanese don't have spinach, so I used sweet potato leaves instead.   That was the first food I knew the Chinese name for but not the English name. 


I let the dough rise for 2 hours.  I got a little busy cleaning out drawers in the kitchen, and I lost track of time.

Here's the recipe.  

Calzone Dough

  • 1 cup warm water
  • 1 tbsp sugar
  • 1 packet yeast
  • 2 1/2 cup flour (I used whole wheat flour for part of it).
  • 1/4 tsp salt
  • 1 tbsp olive oil
  1. Combine sugar and warm water in a bowl.  Sprinkle with yeast and allow to foam.
  2. Combine flour and salt in a separate bowl.
  3. Add flour to yeast mixture and stir to combine.  Add oil.
  4. Stir if possible, then turn mixture out on to a floured surface and knead for several minutes until smooth.
  5. Oil dough ball and set aside.  Allow to rise until doubled or so.
  6. Once ready to cook, preheat oven to 450°F.  Divide dough into balls.
  7. Roll a dough ball into a flat, circular shape.
  8. Add the toppings and pinch the calzone shut. 
  9. Bake until lightly brown.
  10. Allow calzone to cool slightly before eating.

Hello,
I am excited to be blogging for the first time! I am an elementary teacher in North Dakota and cooking is my much-needed stress relief. Unfortunately, I don't always have time to make gourmet or from-scratch meals. When I get to, I really enjoy the process as much as eating the final product. I love my friends and am so grateful that we can share this blog together! Here is my cooking wish list:

Laura's Barbecue Chicken Calzones

Hey girls!  Tonight I make Barbecue Chicken Calzones!  They were super easy and really good.






Here is the recipe:

1 can Pillsbury classic pizza crust
1 package of deBarbeque BBQ Sauce with Chicken
1/2 cup of colby jack cheese

1. Turn oven to 425 degrees
2. Spray cookie sheet and unroll pizza dough on it.  Press the dough so it covers the whole pan then cut it into four squares...probably around 7x5 inch rectagles.  Spoon chicken into half the rectangle and spread it so it's within 1/2 inch from the edge of the dough.  Sprinkle cheese over each.
3.  Fold dough in half and press edges with a fork.
4.  Bake 9-12 minutes or until light brown. 

It only took about 20 minutes from start to finish!  I'd make them again for sure!

Introduction of the Minnesota Girl

I'm so excited to begin this cooking club - Thank you Sarah for starting this!  I love your creative ways of keeping our group of friends close and not letting long distances get in the way of still doing fun things together. 

To any followers of this blog, I'm the Minnesota girl of the group.  Our group of friends met in high school and college and then, as it always does, life took us different directions after college and we are now scattered around the world - California, Taiwan, Minnesota and North Dakota.
